This year Easter falls on April 8th. On this day, you want to believe in a miracle that will definitely happen - with Easter the life you dream about will come, love will conquer hatred, good will be stronger than evil, and life will triumph over death.

Among the Gagauz people, preparations for Easter began on Maundy Thursday, when they painted eggs. According to popular belief, eggs painted on Maundy Thursday do not spoil and are stored until the Ascension Day.

“The eggs were usually painted by the eldest woman in the house, while the rest of the family members were supposed to be present. In the past, it was customary not only to paint eggs, but also to paint them skillfully. The eggs were painted with geometric and floral patterns. Nowadays, the custom of painting eggs has been largely forgotten; usually they are simply painted, sometimes the names of children are written in wax.

Ritual breads (paska) were baked on Friday and Saturday. They were baked from wheat flour in the form of round loaves. Paskas were richly decorated with various kinds of wickerwork made from dough, and sometimes they were sprinkled with poppy seeds on top. In addition to large rolls intended as gifts for godparents, godfathers, and relatives, small rolls were also baked for each family member or just for children. Easter ritual bread was baked not only for Easter, but also for Ascension, as well as for Trinity.

Easter (Paskellä) was celebrated for three days. In the evening we went to church, blessed Easter eggs, Easter food. After the church service, the children distributed offerings to neighbors (a piece of Easter bread and two colored eggs), and only after that the whole family sat down to the Easter table. The Gagauz people broke their fast with blessed paska and eggs. The Easter meal was not cleaned for three days, and everyone who entered the house was treated to paska, eggs, wine or homemade vodka.

Among the Gagauz, like other peoples, games with Easter eggs (dokuşma) are widespread. Children, sometimes adults also joined the game, stood in pairs against each other with colored eggs in their hands. Each person hits their egg against the other person's egg. The one whose egg remains undamaged wins.

On the first day of Easter (in Kotlovina - on Easter Monday), married couples visited their godfathers with Easter rolls and colored eggs. Women who got married this year wore wedding dresses. Arriving at the godfathers’ house, the young couple kissed their hands and presented them with Easter gifts. After the treat, the godmother gave the young couple her gifts: an Easter loaf, eggs, a gift for the young woman. The young women also wore wedding dresses to Easter round dances, which lasted three days of the holiday. Young girls went out to round dances in new dresses, with blossoming buds of spring flowers woven into their braids. The festive fun and abundant feasting lasted three days.”

Easter cake or paska is an indispensable attribute of the meal on the day of Christ's Resurrection. Back in the 19th century, it looked completely different. The Easter cake acquired its familiar form only before the revolution, under the influence of European confectioners, in the form of a rum-baba.

Here is what the historian of Russian cuisine Pavel Syutkin writes: “Before this, at Easter in Rus' they made perepecha - an open pie made of dough, in the middle of which the filling was placed. Any: cottage cheese, mushrooms, and berries. Now this dish has been preserved in Udmurt and Volga cuisine. Sources from the 16th century provide evidence that the boyars’ wives brought these baked goods to the queens from all over the country.”

Until the second half of the 19th century, Kulich was flattened and baked without a mold. It was hearth, that is, it was cooked either on the “hearth” (the lower layer of the roof) in the oven, or on a baking sheet. In villages they often baked it this way back in the first half of the 20th century.

Historian of Russian cuisine Anton Prokofiev emphasizes that rum baba entered Russia with foreign chefs and by the middle of the 19th century had become a common dessert on the Russian table. Gradually, the foreign dessert replaced hearth cake. They always tried to make the Easter delicacy emphatically festive, rich, and rich - after all, it marked the end of Lent. Therefore, eggs, butter, sugar, dried fruits were added there, and selected wheat flour was used. Baba, in a sense, was the ideal of Easter cake. I was also attracted by the unusualness of its shape. Gradually, one dish was replaced by another.

After the revolution and the reign of atheism, they tried to forget Easter; the word “Kulich” was not mentioned. In addition, in the communal kitchen it was problematic to install an oven and bake hearth cakes.
